Ingredients

  • 115 g vegetable oil
  • 115 g 100% chocolate
  • 400 g granulated sugar
  • 2 tsp vanilla extract
  • 4 eggs
  • 240 g flour
  • 2 tsp baking powder
  • ½ tsp salt
  • powdered sugar to coat

Instructions

  • Start by melting the chocolate and allowing it to cool slightly.
  • Add the oil to the chocolate and stir.
  • Add the sugar and vanilla extract to the oil/chocolate mixture and stir until well combined.
  • Stir in the eggs one at a time, making sure each egg is fully incorporated before adding the next.
  • Add the flour, salt, and baking powder and stir until the mixture is homogeneous with no lumps.
  • Chill the dough for at least 2 hours.
  • Preheat your oven to 350F/175C.
  • Scoop the dough and roll it into balls, then coat each ball in powdered sugar.
  • Place the cookies on a baking sheet and bake for 10-12 minutes, or until the edges are firm but the centers are still slightly soft.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
