Hey my dudes!

Chocolate mousse is one of my all-time favorite desserts. It’s decadent, silky, and super chocolaty – the perfect show-stopping dessert for any special occasion, especially for a romantic date night or Valentine’s Day. I mean, who doesn’t love chocolate, right?

Here’s a recipe for the most delicious chocolate mousse you’ll ever have. It’s easy to make, and you only need a few simple ingredients:

  • ½ c or 115 heavy cream
  • 6 oz or 170g bittersweet chocolate
  • 3T or 60g unsalted butter
  • 3T whiskey or rum
  • 3 yolks
  • 3 Tbsp coffee
  • 3 Tbsp or 40g sugar
  • 3 egg whites
  • 1 tsp vinegar
  • ¼ c or 50g sugar

First, whip the heavy cream until very soft peaks form. Stick it in the fridge until he other elements of the mousse are ready.

Next, melt the chocolate and butter together and break with the liquor. It will look split and that is what we want right now. Set it aside.

In a separate bowl, combine the yolks, coffee, and sugar. Whisking continuously cook over a Bain marie until thick ribbons form. Remove from the heat and begin adding to the chocolate/butter mixture. Continue to break the chocolate. Keep adding the yolk floof until the chocolate comes together and is thick, shiny, and glossy.

In another bowl, whip the egg whites and vinegar until foamy. Add the sugar a bit at a time, and whip until semi-stiff peaks form.

Fold the meringue into the chocolate mixture by thirds, making sure there are no streaks or spots between additions. Once all the meringue is in, begin adding in the whipped cream in the same way.

Pour the mixture into your serving container or bowls and let it set in the fridge for at least 4 hours or overnight. When you’re ready to serve, enjoy it with a dollop of softly whipped cream.

Instructions

Whipped Cream

  • While cream until very soft peaks, stick in the fridge.

Chocolate

  • Melt chocolate and butter together.
  • Start to break with the liquor.
  • Set to the side.

Whipped Yolks

  • Combine yolks, coffee and sugar.
  • Whisking continuously cook over a Bain marie until thick ribbons form.
  • Take from the heat and continue to break the chocolate.
  • Keep adding the yolk floof until chocolate comes together and is thick/shiny/glossy/happy.

Meringue

  • Whip egg whites and vinegar until foamy.
  • Add the sugar a bit at a time
  • Whip until semi-stiff peaks.

Put it all together

  • Fold the meringue to the chocolate by thirds making sure there are no streak or spots between additions.
  • Once all the meringue is in begin adding in the whipped cream in the same way.
  • Pour into serving container/bowls/glasses and let set in the fridge for at least 4 hours or overnight.
  • Enjoy with softly whipped cream.
