Chocolate Crinkle Cookies

- 115 g vegetable oil
- 115 g 100% chocolate
- 400 g granulated sugar
- 2 tsp vanilla extract
- 4 eggs
- 240 g flour
- 2 tsp baking powder
- ½ tsp salt
- powdered sugar to coat
Start by melting the chocolate and allowing it to cool slightly.
Add the oil to the chocolate and stir.
Add the sugar and vanilla extract to the oil/chocolate mixture and stir until well combined.
Stir in the eggs one at a time, making sure each egg is fully incorporated before adding the next.
Add the flour, salt, and baking powder and stir until the mixture is homogeneous with no lumps.
Chill the dough for at least 2 hours.
Preheat your oven to 350F/175C.
Scoop the dough and roll it into balls, then coat each ball in powdered sugar.
Place the cookies on a baking sheet and bake for 10-12 minutes, or until the edges are firm but the centers are still slightly soft.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
