Tips and Tricks for Swedish Cardamom Buns

I’ve been getting a lot of questions from friends and followers lately so today I’ll be sharing my tips and tricks for Swedish cardamom buns. I’ll be covering how to freeze your unbaked buns, how to defrost them, my favorite way to speed up proofing, how to make your day-old buns taste fresh out of the oven, and the best way to store your buns.

How to Freeze 

Let’s start with freezing your buns. Sometimes you don’t want to bake all your buns at once, or you might be prepping ahead for visitors or an event. If you don’t want to bake your buns the day they’re made, the best thing to do is to freeze them! They can last in the freezer for up to a week. Tray them up, ensuring they don’t touch, and put them in the freezer until they’re frozen solid. Then, transfer them into bags and put them back in the freezer until you’re ready for them.

Defrosting to bake

When you’re ready to bake them, there are a few options for defrosting. You can put them in the fridge overnight and then proof them on the counter in the morning, or you can leave them on the counter until they come up to room temperature and then proof them fully outside. Once they’re at room temperature, you can use the oven trick.

The Oven Trick (how I speed up proofing)

So, what’s the oven trick? To create an instant proofing box, boil a shallow pan of water, put it in an off oven with your buns, and check them every 15 minutes and reboil water as necessary. But be careful not to get it too steamy, or you’ll melt the butter out of the buns. This isn’t the worst thing that could happen, but it doesn’t help the texture any.

How to Reheat

To reheat a day-old bun, you can either microwave it or heat it in the oven. With both methods, brush with melted butter, then heat, and finally brush with a bit of simple syrup. It’ll taste like it just came out of the oven! From frozen, it takes about 10-15 minutes in the oven or 45-60 seconds in the microwave. From room temperature, it’s 20-30 seconds in the microwave or 5-7 minutes in the oven.

Storing your Baked Buns

If you’re planning to eat them within two or three days, leave them in a plastic bag on the counter. If it’ll be longer than that, freeze them right away. But never refrigerate them! It messes with the texture and dries them out.
