This chocolate sauce recipe is probably one of the easiest recipes I will ever give you, folks. It’s just four ingredients and comes together in less than five minutes.

A long, long time ago, when the earth was green and I was young, I worked as a pastry cook at the French Laundry. It was an incredible place to work, extremely high level and fast-paced. I was stressed the entire time, but I loved every minute. I worked there for four months while I waited for a restaurant to open in Stockholm.

The pastry menu had so many different things on it. There were always six different desserts, not including special ones we would make for VIPs. Each tasting menu followed the same structure for its desserts. It always featured a fruit dessert, a chocolate dessert, an ice cream or frozen-based dessert, and, of course, all the mignardises, which are like small candies, cookies, and goodies.

All of this is to say, we made some pretty special “sundaes,” and that’s where I picked up this recipe. It blew my mind for two reasons. The first reason is that it was so delicious. The second reason is that it was so easy! I had never made chocolate sauce before, and being a three-star restaurant, I would have assumed the process for making the sauce would be difficult and convoluted. This is anything but!

It’s also pretty flexible. You can use any type of dark chocolate here. I usually use 80% because I like a more intense chocolate flavor. However, you could totally use 60%, 70%, or even 90%—whatever you have on hand.

No matter which chocolate you choose, once you make this chocolate sauce, you will never go back to the bottled stuff again!

Ingredients

  • 200 g water
  • 200 g sugar
  • 50 g cocoa powder
  • 50 g dark chocolate

Instructions

  • In a small sauce pot, combine water, sugar, cocoa powder, and dark chocolate.
  • Place the sauce pot over medium-high heat and start whisking continuously.
  • Keep whisking until the mixture comes to a boil. Allow it to boil for about 10 seconds.
  • Remove the sauce pot from the heat immediately.
  • Your chocolate sauce is now ready to enjoy! You can serve it hot over ice cream or let it cool and then drizzle it over your favorite dessert.

Notes

For a thicker sauce, you can boil it for a minute or two, but remember to keep whisking the entire time to prevent sticking or burning.
Keep in mind that the sauce will naturally thicken as it cools down.
